This crunchy salad is my favorite dinner and is loved by everyone who tries it. Even my sister (a kale hater). It is made in one bowl and has seriously the best dressing I have ever tried. Enjoy!
Thai Peanut Sauce Salad
Lots of people have asked me to post this recipe and it is definitely one of my top 5 favorites. There are so many flavors and textures in this salad that go so well together.
You can really use any greens/lettuce you want, but the kale is my favorite pair with the peanut sauce because it absorbs it nicely and the flavors go well together. I have also used romaine, Ice burg lettuce, or mixed greens. Basically whatever is in your fridge!
Tips
I recommend letting this salad sit overnight before serving because the sauce tenderizes the kale and letting it sit allows time for the flavors to marinade.
Although it is probably my favorite thing in the whole world, peanut butter is a pain to clean out of measuring cups. This is my new favorite trick for getting zero pb residue on my measuring cups! Just spray some cooking spray on the inside of your measuring cup/spoon before filling it, and the peanut butter slips right out without residue.
