A simple marshmallow recipe with three ingredients, no sugar, and 0 carbs. These marshmallows have the taste and texture of a marshmallow from the store, but without the sugar and corn syrup.
These marshmallows are the perfect topper for my hot cocoa recipe (posted @low_carb_with_lilly on Instagram), used in a dessert, or a sweet treat on their own.
Sugar Free Marshmallows
This super easy recipe took very little time to make, but the hardest part was waiting for the marshmallows to solidify!
For this recipe I used a recipe by "Wholesome Yum" and made a few changes for my recipe. After the long wait, they came out great!
Marshmallow Tips
While making these, I came across a problem. As you can see in my YouTube video, while pouring the marshmallow mixture into the pan my mixture was not whipped enough because there wasn't stiff peaks and it appeared easy to pour.
After the chilling process, I realized they were separated. The gelatin was at the bottom and the sugar and water mixture had come to the top. I ended up saving them by scraping the top off (thankfully it came off easy haha) and melting it back down before pouring it over the gelatin and whipping until stiff peaks this time.
make sure your mixture is not liquid and has stiff peaks before waiting a long time to find out they separated and you have to redo them.
