Chocolate Chip "oat" bars
One of the main things for me in a bar is texture. I find that most low carb bar recipes don't meet the balance of chewy and crunchy and can at times be heavy on nut butter, which can be overwhelming.
I made this recipe because I have yet to find a bar recipe without nut butter and with the right granola bar texture.

The "oats"
My favorite way to imitate oats is by taking equal parts of slivered almonds, and shredded coconut, and lightly pulsing in a food processor.
I find this method creates a texture and taste that best replicates oats; Why I chose it for this recipe.
Tips
Be careful not to over pulse your oat mixture because it will turn into almond and coconut flour and you will end up with more of a cake or bread.
You can customize this recipe by adding toppings like cinnamon, other nuts of choice, pumpkin puree, cocoa powder, peanut butter, dried fruit, etc.
*please note*
the "added sugar" should be subtracted from the total carbohydrates because the recipe uses sugar alcohol, which is not added sugar, and has zero carbohydrates.
