This carrot loaf is moist and delicious, just like the cake version. My recipe is gluten free, sugar free, and perfect for breakfast, snack, or dessert.
This loaf pairs perfectly with the vanilla cream cheese frosting included in my recipe below.

This recipe was inspired by the cake we all know and love....carrot cake :)
I actually got the idea when I saw someone post a vegan carrot loaf on Instagram.
I loved the idea, so I made my own version of the recipe with low carb ingredients.

Carrot Loaf Tips
Most carrot cake recipes, loaf or no, usually include grated, raw carrots.
To add moisture to the loaf, I sliced my carrots, steamed them, then pureed it before mixing into my batter. for texture, I like adding in an additional carrot that is raw and grated and/or unsweetened coconut flakes.
As you can see in my YouTube video, the carrot loaf was a little crumbly even though it wasn't dry.
I often add a half cup of sour cream or Greek yogurt to muffin, loaf, or cake recipes for extra moisture and a fluffier baked good.
I would recommend trying this in your carrot loaf even though it's an optional step.
*Please note*
the "total sugar" should be subtracted from the amount of carbs when carb counting. The sweetener is a sugar alcohol and does not count as carbohydrates.
